Black Bean Soup


A 'Full House' (or Conference Room) today for lunch! And a big group means there is always 'interesting' conversation!

Black Bean Soup

Mix together in crockpot and simmer:

1 onion, chopped
2 bell peppers, chopped
minced garlic
1/2 cup chopped celery
1/2 cup chopped carrots
1 can tomatoes
1 can V-8 Juice
4 cans black beans
1 can green chili peppers

About 30-45 minutes before serving add:

1 container Philadelphia Santa Fe Cooking Cream

Top with:

Cilantro
Sour Cream
Shredded Cheddar Cheese

Serve with:

Tortillias, Chips or Bread

We will definitely be adding this recipe to our 'It's A Keeper' List! The Santa Fe Cooking Cream really added alot of flavor!
